You should have appropriate crockery for your guests and enough (if not more) to go around. Try to have matching sets, not odds and sods, as it adds to the 'branding' of your property.
Make sure the kitchen caters for the customer; young groups may prefer a microwave to a cooker, or lots of glasses rather than lots saucepans and cooking equipment, for instance. Families should have plastic cup alternatives for young children, etc.
Ensure (each year) that everything is in good condition - things will inevitably get broken and worn but you should have a contingency set aside for this.
